Hi Nancy-I know I'm a day late and a dollar short on your January 1st post. I saw it then, but had to move on...2 year old Grandson was in residence. The Hoppin' John looked so good. I had never eaten any until my husband and I went out right before Christmas to eat. It was on a buffet, but not as good as your pictures look, kind of mushy. I've had a recipe for Hoppin' John salad since 2004 from Southern Living magazine, and finally decided to make it in January. It also called for chopped Jalapenos and it was very good, even tho cold. This year I think I'll try to fix Hoppin' John myself...should be better than the restaurant version.
